Excitation of low-dimensional material interfaces with intense optical fields can drive transitions into highly correlated many-body states that occur over a wide range of time and energy. The ultrashort pulses and broad spectrum of soft X-rays emitted through the process of high-harmonic generation allow following the material's response as the light-field excites charge carriers, and the subsequent carrier-carrier and carrier-lattice interactions redistribute the energy within and across interfaces. In my talk I will highlight recent advances in high harmonic light sources for probing light-induced dynamics in low-dimensional materials and discuss the carrier and lattice dynamics in highly photo-doped graphite.
